AMARETTO CHEESECAKE 
1 1/2 c. graham cracker crumbs
1/2 stick butter, melted
2 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
1 c. sour cream
1 tsp. vanilla
4 eggs
1/3 c. amaretto
1/4 tsp. salt
2 tbsp. sugar

Combine crumbs and butter; press over the bottom and sides of a greased 9 inch springform pan. Chill. Preheat oven to 325 degrees. Beat cream cheese until smooth. Add eggs, 1/2 cup sugar, amaretto and 1 teaspoon vanilla.

Beat until smooth. Pour into pan and bake 1 hour and 15 minutes or until firm in the middle. Combine sour cream, 2 tablespoons sugar and 1 teaspoon vanilla together. Pour over the baked cake and bake an additional 10 minutes. Cool 20 to 30 minutes in the pan before removing. Cool completely before serving.
