SATURDAY NIGHT SPECIAL 
2 lbs. ground beef
1 med. onion, minced
1 tsp. garlic powder
1 tsp. salt, pepper as desired
2 cans pinto beans
1 med. bell pepper
1 pkg. corn tortillas
1 tsp. chili powder or 1 pkg. taco mix
1 lb. cheddar cheese

Brown beef, pour off excess fat. Add onion, bell pepper, garlic, salt and pepper. Cook until onion is tender. Add pinto beans, simmer 20 to 30 minutes. Grease 3 quart Dutch oven lightly and line bottom with tortillas. Spoon bean, hamburger mix over tortillas. Spoon bean, hamburger mix over tortillas, cover with shredded cheese. Layer until all mixture is used. Top with cheese, cover and bake 20 minutes in 300 degree oven. Serve with tossed salad.
