SPINACH PARMESAN | |
3 lb. fresh spinach, (cooked), drained and chopped 1/2 c. Parmesan cheese 1/3 c. minced onion 1/3 c. heavy cream 1/2 c. melted butter 1 tsp. salt 1/4 tsp. pepper 1/2 c. Ritz crackers Preheat oven to 400 degrees. Grease a 2 quart casserole. Combine spinach, cheese, onions, cream, 1/4 cup butter, salt and pepper. Mix well. Place in casserole. Blend remaining butter and crumbs. Sprinkle over spinach. Bake for 15 minutes until golden brown. |
