2 c. water 1 env. unflavored gelatin 2 c. fruit (cherries, strawberries, raspberries, blackberries, etc.) 1 tsp. lemon juice (taste first) 1/3 c. honey Pour 1 cup water into a large saucepan and sprinkle gelatin over it. Let stand for 5 minutes. Mash half the fruit with 1 cup water and the lemon and honey. Mash the remaining berries and add to the saucepan. Heat just to boiling, stirring constantly. Ladle into 1/2 pint jars and refrigerate. For longer keeping, freeze. Yields: about 2 pints. NOTE: Instead of mashing berries, you can puree them in a blender. |
