CORN FRITTERS 
1 c. all-purpose flour
1/4 c. sugar
1 tsp. baking powder
1/8 tsp. salt
2 eggs, well beaten
1 c. cream style corn
Hot salad oil
Maple syrup (optional)

Combine flour, sugar, baking powder and salt. Stir in eggs and corn, mixing well. Carefully drop batter by tablespoonfuls into deep oil, heated to 375 degrees. Fry until golden, turning once. Drain on paper towels. Serve hot with maple syrup, if desired. Yields about 2 dozen.
