TROPICAL CHICKEN 
3 c. diced or ground chicken
1 c. chopped celery
2 c. chunk pineapple
1 c. mandarin oranges
1/2 c. mayonnaise
1 fresh banana
1 tsp. curry powder

Top with coconut and cashew nuts.

Boil about 2 pounds of chicken. When tender, cool chicken and dice. Chop celery and dice the banana. Drain pineapple and oranges.

Mix diced chicken, banana and celery with pineapple and mandarin oranges. Set aside.

Mix mayonnaise with 1 teaspoon of curry powder and stir in chicken mixture. Chill one hour and garnish with coconut and cashews. No salt needed.
