CRAB NEWBURG 
1/4 c. reduced fat butter
3 tbsp. flour
1/2 tsp. salt
1/2 tsp. dry ground mustard spice
1/4 tsp. pepper
2 c. skim milk
2 c. canned crab meat
2 tbsp. apple juice

Melt butter in a 3 qt. saucepan over medium heat. Stir in flour and spices; stir constantly and cook until smooth and bubbly. Stir in milk and boil for 1 minute. Stir in lobster and juice. Serve hot inside split popovers.
