SCHNITZ UN GNEPP 
2 lb. smoked ham
2 c. dried sweet apples
2 tbsp. brown sugar

Cover dried apple schnitz with water overnight. In morning in fairly large kettle, cover ham with cold water and cook slowly 2 hours. Add apples and water in which they were soaking and brown sugar and slowly cook 1 hour longer.

GNEPP (DUMPLINGS) :

2 c. flour
4 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
2 tbsp. butter

Sift together flour, baking powder, and salt. Add beaten egg and butter. Add enough milk to make a stiff batter. Drop from tablespoons into hot simmering broth on top of apples. Cover kettle with tight lid and lightly cook for 20 minutes. DO NOT lift lid.

We slice ham and serve on a platter. The dumplings we place in soup bowl, add apples and broth and pour cream or sweetened milk over them.
