EASY LEMON PIE 
DOUBLE CRUST:

2 c. flour
1 tsp. salt
2/3 c. shortening
5-7 tbsp. of one of the following: Club soda, bitter lemon or tonic water

FILLING:

2 lemons
1 3/4 c. sugar
4 eggs, beaten

Mix pastry ingredients and roll out for double crust. Peel lemons, removing white layer from fruit and seeds. Slice lemons very thin. Add sugar and let stand 20 minutes. Add eggs and mix well. Pour into pie shell and adjust top crust. Bake at 400 degrees for 35 minutes.
