MEXICAN MANICOTTI 
1 lb. ground beef
1 (15 oz.) can refried beans
3/4 tsp. cumin
1 tsp. oregano
1 (16 oz.) pkg. manicotti pasta shells
1 1/2 cups water
1 cup salsa (your choice)
1 (8 oz.) tub dairy sour cream
1/2 cup shredded Mexican "fiesta" blend cheese

Brown ground beef at medium heat. Drain and return to pan. Combine beef, refried beans, cumin, and oregano. Mix well.

Stuff uncooked manicotti shells with beef mix. Lay manicotti shells in a 9x13-inch baking dish sprayed with non-stick cooking spray (Pam).

Mix salsa and water and pour over manicotti and cover with Saran or plastic wrap. Microwave for 10 minutes. Turn manicotti over, recover and microwave for 17 minutes making sure that plastic wrap is and stays on tight.

Spread dairy sour cream over manicotti then sprinkle on cheese. Microwave until cheese is melted.
