CHICKEN PARMESAN 
6-8 skinned and boned chicken breasts
2 eggs, lightly beaten
1 c. seasoned flour
1-2 c. grated Parmesan cheese
3 tbsp. butter
1 lg. onion, chopped
1 (32 oz.) jar spaghetti sauce
2 c. grated Mozzarella cheese

Dip chicken breasts in egg, dredge in seasoned flour and roll in Parmesan. Place chicken in frying pan with butter, brown on both sides, 3-5 minutes per side. Remove and place in baking dish. Cover chicken with chopped onion, spaghetti sauce, Mozzarella and any leftover Parmesan. Bake at 350 degrees until browned on top, about 30 minutes.
