YEAST BREAD 
1 c. milk, scalded
1 c. hot water
1 tbsp. lard
1 tbsp. butter
2 tbsp. sugar
2 tsp. salt
1 yeast cake
1/4 c. warm water
6 1/2 c. bread flour, sifted before measuring

Combine milk and hot water; pour over lard, butter, sugar, and salt. Dissolve yeast in 1/4 cup warm water. When first mixture is lukewarm combine with yeast. Slowly stir in 3 cups of flour. Beat batter for 1 minute, then add remaining flour. Put dough on floured board. Knead it well, folding edges of dough toward middle and pressing it down. Continue this method until elastic and full of bubbles. Put in large bowl. Cover. Let raise 1 hour. Knead it again to it original bulk. Let rise again for 1 1/2 hours. Shape dough into loaves. Put in greased pans. Let raise again in pans. Bake until it shrinks from sides of pan, about 45-50 minutes.
