PORK OR CHICKEN IN WINE 
2 eggs
Salt & pepper
1 c. dry unflavored bread crumbs
4 pork chops or chicken breasts, pounded thin
3 tbsp. butter
1 tbsp. olive oil
1 c. dry white wine

Beat eggs, salt and pepper. Dip meat in eggs and coat with bread crumbs. Let stand 10 minutes. Melt butter and oil. When butter foams, add chops. Cook over medium heat 5 to 6 minutes until brown. Stir in wine. Cover skillet and reduce heat. Simmer 15 to 20 minutes. Add wine if dry. Uncover last few minutes.
