BROCCOLI, CAULIFLOWER CHEESE
SOUP
 
1/2 c. celery, diced
1/2 c. carrots, diced
1/2 c. green pepper, diced
1/4 c. onion, diced
1 c. cauliflower
1 c. broccoli
3 chicken bouillon cubes
3 c. water
6 c. milk
1/2 c. butter, melted
1/2 c. flour
1 1/4 c. Velveeta cheese
3/4 c. American cheese

Prepare 1/2 cup each of diced celery, carrots, and green pepper, plus 1/4 cup diced onion, 1 cup cauliflower and 1 cup broccoli. Dissolve 3 chicken bouillon cubes in 3 cups water. Cook all vegetables in this broth until tender. Add 6 cups milk. Cream 1/2 cup melted butter and 1/2 cup flour until smooth. Add to mixture, stirring to keep smooth. Turn heat down to simmer. Add 1 1/4 cups Velveeta cheese and 3/4 cup American cheese. Heat until melted, stirring constantly.
