CHICKEN CASSEROLE | |
3 chicken breasts, halved 1/2 tsp. salt 1/4 tsp. pepper 1/2 tsp. Accent 3/4 c. self-rising pancake mix 1/2 c. peanut oil 1 c. instant rice 1 can cream of chicken soup 3/4 c. half and half Wipe chicken dry with paper towel. Sprinkle with portion of salt, pepper, and Accent. Place pancake mix in a plastic bag and coat each piece of chicken in it. Heat the oil in a skillet and brown the chicken pieces. Cook rice according to package directions. Stir the soup and the half and half into the cooked rice. Put the soup and rice mixture into a buttered casserole, then put the chicken pieces over the top. Place in a 350 degree oven for 35 minutes. Serves 6. |
