HADDOCK - MAUREEN'S 
16 oz. pkg. fish, thawed
1/4 c. butter
1 sm. chopped onion
1 green pepper
14 oz. canned tomato
3 tbsp. flour
Salt and pepper
2 c. grated Mozzarella cheese

Melt butter, saute onion and green pepper. Blend in flour, salt and pepper. Add tomatoes. Heat 5 minutes, stirring constantly. Arrange fillets in greased casserole. Pour sauce over fish and top with cheese. Bake at 350 degrees for 30 to 35 minutes. Garnish with parsley.
