MEXICAN FRUIT CAKE 
1 (20 oz.) can crushed pineapple, undrained
2 c. all purpose flour
2 tsp. baking soda
2 c. granulated sugar
2 eggs
1 c. walnuts or pecans

Preheat oven to 350 degrees. Mix fruit cake ingredients together. Pour into 13"x9" pan, greased with butter and bake 45 minutes (35 minutes if using a glass dish). Ice with Cream Cheese Frosting while warm.

CREAM CHEESE FROSTING:

2 c. confectioners' sugar (1 box)
1 (8 oz.) pkg. cream cheese
1 stick butter, melted
1 tsp. vanilla

Blend ingredients until smooth and frost cake.
