HUSH PUPPIES 
vegetable oil
3/4 c. yellow cornmeal
1/3 c. all purpose flour
1 1/2 tbsp. baking powder
1/2 tsp. salt
1/2 c. buttermilk
1 egg
1/4 c. finely chopped onion

Heat 2 to 3 inches vegetable oil in deep fryer or large sauce pan to 350°F. Mix cornmeal, flour, baking powder and salt in medium mixing bowl. Add remaining ingredients; mix well. Drop batter by tablespoons into hot vegetable oil. Fry a few at a time, 3 to 4 minutes or until golden brown. Drain on paper towels. Repeat with remaining batter. Serve immediately or keep warm at 175°F oven.

Makes about one dozen hush puppies.
