LINDA'S SQUASH POT | |
This recipe I concocted one day from leftover squash from the garden. I just threw it all together and my husband loved it! It's the most simple side you'll ever make. It's great all by itself, cold or hot, side dish or main stew... However you want to eat it! 6-7 squash (any kind in season, zucchini, yellow, etc.) 1 onion 2 tomatoes 1/2 to 1 stick butter 2 cloves fresh garlic 1/2 cup water salt and pepper, to taste Cut all squash into medium to thick pieces and place in large pot. Dice onion and tomatoes, place with squash. Cube butter and mince garlic, place in pot. Season with salt and pepper. Add 1/2 cup water (not too much! As it boils down, it creates it's own liquid).
