SALMON LOAF 
2 tbsp. butter
2 tbsp. all-purpose flour
2 c. milk
1 c. mild cheese, grated
1/3 c. bell pepper, finely chopped
Salt & pepper
2 eggs
1 lb. can salmon
1 c. cracker crumbs
1/2 c. onion, finely chopped

Combine butter, flour and milk to make cream sauce. Add cheese, bell pepper and season to taste. Mix eggs with salmon. In buttered casserole place layer of salmon, layer of sauce, layer of crumbs, etc. Bake at 350 degrees for 25 to 30 minutes until bubbly and slightly browned.
