PEAS WITH PROSCIUTTO 
1 c. chicken broth
3 (10 oz.) pkgs. frozen peas, thawed
3 tbsp. olive oil
1 med. onion, thinly sliced
1/4 lb. prosciutto, diced
Salt & pepper to taste

Cook peas according to package directions and drain. Heat oil in a small skillet. Add onion. Saute over medium heat until pale yellow. Add prosciutto and peas. Saute 3 to 4 minutes. Season with salt and pepper. Serve hot. Makes 8 servings.
