HEAVENLY CHEESECAKE 
3/4 c. graham crackers
2 tbsp. butter
1 (15 oz.) Ricotta cheese
1 (8 oz.) plain yogurt
1 c. sugar
2 tbsp. flour
2 tbsp. lemon juice
1 (8 oz.) cream cheese
6 oz. egg product
2 1/2 tbsp. vanilla
Fresh fruits such as strawberry or blueberries to garnish

Combine graham crackers and butter. Press into bottom of a 9 inch pan. Bake in a 325 degree oven for 5 minutes. Cool. Blend Ricotta cheese, yogurt, sugar, flour and lemon juice. Blend until smooth. Set aside.

In another bowl beat cream cheese until smooth. Add egg substitute and vanilla. Add Ricotta mixture to cream cheese mixture. Beat until combined. Pour into crust. Bake at 325 degrees for 1 hour until center is set. Cool for 15 minutes. Loosen crust from sides of pan. Cool for 30 minutes more or until completely cool. Chill for 4-6 hours. Top with fresh fruits. Makes 12 servings.
