BREAD PUDDING | |
12 slices stale French bread, broken up 2 (13 oz.) cans evaporated milk 2 1/2 c. water 1 1/2 c. sugar 1 tbsp. vanilla extract 2/3 c. raisins 1 (17 oz.) can fruit cocktail, drained 1 c. flaked coconut 1/2 c. butter, melted 6 eggs In a large bowl, soak bread in milk, water, sugar and vanilla. Let stand 1 hour, stirring occasionally. Preheat oven to 350 degrees. Grease a 13 x 9 inch baking dish. Add raisins, fruit cocktail, coconut and melted butter. Beat eggs well by hand or at low speed in mixer; add to mixture, blending well by hand. Pour into baking dish. Bake 1 hour. Makes 12 to 16 servings. |
