NON-DAIRY "MELTY CHEESE" 
2 c. water
4 oz. jar diced pimento
1/4 c. cashews (raw, washed)
1 1/2 tsp. salt
1/2 tsp. onion powder or flakes
1/4 tsp. garlic powder
2 to 3 tbsp. arrowroot
3 tbsp. food yeast flakes (not bread yeast - get at Grain Depot)
1 tbsp. lemon juice (to taste)
Pinch of cayenne pepper

Blend cashews in a bit of water in blender, and add remaining ingredients blending until smooth.

Cook in heavy saucepan until thick stirring constantly (scorches easily).

Great as a dip or cheese sauce. Tastes just like it.

Use 2 tablespoons arrowroot (cornstarch) for sauce.

Use 3 tablespoons arrowroot (cornstarch) for dip or spread.
