MEXICAN LASAGNA 
1 lb. ground turkey
1 pkg. taco seasoning
1 med. onion, chopped
1 1/2 c. tomato sauce
16 oz. picante sauce
16 oz. cottage cheese
3 eggs
8 corn tortillas
6 oz. shredded Monterey Jack
4 oz. shredded Cheddar or Mozzarella

Brown turkey and onion. Simmer first 5 ingredients for 10 minutes. Combine cottage cheese and eggs. Spray a 9 x 13 inch pan. Layer 1/2 meat, 1/2 tortillas, 1/2 cottage cheese, eggs, 1/2 cheese. Repeat.

Bake at 350 degrees for 20 to 25 minutes. Makes 8 servings.

4 protein, 1/2 vegetable, 1 bread.
