MEXICAN LASAGNA 
1 lb. ground turkey
1 pkg. taco seasoning
2 eggs, slightly beaten
1 c. chopped tomato
1/2 c. chopped green pepper
1/2 c. chopped onion
2 c. cottage cheese
6 corn tortillas
2 c. chopped lettuce
1 1/2 c. (6 oz.) shredded cheddar cheese

In large skillet brown turkey. Add onion and peppers. Cook until onion and peppers are soft. Add tomatoes and seasoning. Simmer 5 minutes.

In bowl combine cottage cheese, eggs and 1 cup cheddar cheese. Place 3 tortillas on bottom of greased 8 x 12 inch baking dish. Spoon meat mixture into dish. Top with 3 tortillas; then sprinkle with cheese mixture. Bake covered 45 minutes at 350 degrees. Sprinkle with remaining 1/2 cup cheddar cheese. Bake uncovered 5 minutes longer. Before serving, arrange tomatoes and lettuce around edge of casserole.
