CHICKEN AND RICE SUPREME 
2 c. seasoned chicken broth or use canned broth
1 c. UNCLE BEN'S® Rice
Chicken breasts (number depends on how many being served)
Flour
Seasonings
Beaten eggs
Fresh cut mushrooms

To the chicken broth, add a few drops of yellow food coloring. Pour broth over rice and bake covered for 40 minutes in 400 degree oven.

Flour and season chicken breasts. Dip in beaten eggs. Brown in hot oil (olive, peanut or puritan). When rice is done, top with breasts and mushrooms.

Make gravy from broth and pour over chicken and mushrooms. Bake uncovered for 30 minutes at 325 degrees. Serve from baking dish.
