CHICKEN CACCIATORE 
6 tbsp. salad oil
2 - 2 1/2 lb. fryers, cut up
1 c. minced onion
3/4 c. minced green pepper
4 minced cloves garlic
1 (No. 2 1/2) can tomatoes
1 (8 oz.) can tomato sauce
1/2 c. chianti wine
3 3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. allspice
2 bay leaves
1/2 tsp. dried leaf thyme
Dash of cayenne pepper

In hot oil in large skillet, saute chicken until golden brown on all sides. Add onions, green pepper and garlic and brown lightly. Add rest of ingredients and simmer, uncovered for 30 to 40 minutes. You can use 1 fryer and cut this recipe in half.
