What better way to start a party than with the ever popular chicken livers and water chestnuts wrapped in crispy bacon? For a zesty flavor, dip the appetizers in soy sauce before broiling. 20 chicken livers 20 slices bacon, cut into halves 20 water chestnuts, cut into halves 1/2 c. soy sauce 1. Remove and discard fat and white tissue from chicken livers. Cut livers into halves. Wrap half slice bacon around chicken liver half and water chestnuts halve, secure with wooden pick. Repeat with remaining livers, chestnuts and bacon. 2. Carefully dip each prepared rumaki in soy sauce or brush both sides with soy sauce. Place on greased jelly roll pan or baking sheet with sides. Broil about 3" from heat in preheated oven until bacon is crisp 5 to 8 minutes. Serve hot. Makes 40. |
