FRIED RICE 
2 c. rice
1-2 lbs. meat, diced (your choice)
1 c. green pepper, diced
2 tbsp. onion, diced
2 tbsp. carrot, diced
2 eggs

Steam rice in rice cooker or covered pot. Mix eggs in a bowl and fry omelet style in a wok or large skillet. Fry the meat and vegetables in 3 tablespoons vegetable oil for about 3 minutes.

Using a large spoon, stir steamed rice into meat and vegetables. Mix thoroughly while adding soy sauce as you go (soy sauce is salty so add to taste). Place in large bowl and garnish with chopped eggs and chopped scallions.
