RICE AND MUSHROOM RING 
1 c. rice
1 sm. onion, diced
2 1/2 c. water
Salt and pepper
Parsley, chopped
1 lb. mushrooms
2 tbsp. butter

Steam rice. Clean mushrooms and chop. Saute mushrooms and onion; mix with steamed rice. Add seasoning and place in a greased ring mold. Place in a pan of hot water in a moderate oven for about 30 minutes.
