GREEN BEAN SOUP WITH LEMON CHIVE
BUTTER
 
LEMON CHIVE BUTTER:

1/2 c. chopped chives or green onions
1/3 c. butter
Juice of 1 lemon
1 sm. clove garlic, minced
1/4 tsp. salt

Combine all ingredients until blended.

SOUP:

1 onion, chopped
3 tbsp. butter
1 1/2 lbs. green beans, trimmed and chopped
4 c. chicken stock
1 c. whipping cream
Salt and pepper to taste

Cook onion in butter until tender. Add beans and cook about 5 minutes. Add the chicken stock; bring to boil, reduce heat and cook until beans are tender, about 15 minutes.
