PEANUT BRITTLE - MICROWAVE 
1 1/4 c. granulated sugar
2/3 c. light corn syrup
1 c. dry roasted peanuts (unsalted)
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart casserole dish, stir together sugar and syrup. Microwave on high, uncovered 4 minutes. Add peanuts; stir well. Microwave on high, uncovered for 5 minutes. Add butter and vanilla; stir well.

Microwave on high, uncovered, 2 minutes. Add baking soda and gently stir until light and foamy. Quickly pour mixture onto lightly greased cookie sheet or marble slab. Use wooden spoon to spread thin. Let cool, break and eat. Store in airtight container. Prepare your cookie sheet or marble slab before you get started. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
