LADY ELKS ZUCCHINI QUICHE 
2 c. diced zucchini
3 eggs, slightly beaten
1 c. milk
1/4 c. melted butter
1 sm. jar pimentos (optional), drained and chopped
1 1/2 c. crumbled saltine crackers
2 c. shredded Cheddar cheese, sharp or mild
Dash of paprika

(I sometimes add the pimentos from a jar of green stuffed olives - just for some color).

Cook zucchini in boiling salted water for 5 minutes. Drain well. Add remaining ingredients except paprika. Pour in greased 9 x 13 inch pan. Sprinkle paprika on top. Bake at 300 degrees for 25-30 minutes until bubbly.
