WICHITA CRUMB COFFEE CAKES | |
3 c. flour 2 sticks butter 2 c. sugar 1/2 c. brown sugar 1 tsp. nutmeg 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. allspice (optional) 1/2 tsp. salt 2 c. buttermilk 2 tsp. baking soda 2 beaten eggs 1 c. raisins 1 c. nuts Mix flour, butter and sugars together until crumbly. Take out 3/4 cup; set aside. To mixture stir in nutmeg, cinnamon, cloves, allspice and salt. Combine mixture with buttermilk, soda, eggs, raisins and nuts. Pour batter into three 8 or 9 inch pans. Sprinkle 3/4 cup crumb mixture on top of batter. You can add coconut, or wheat germ. Bake at 350 degrees for 25 minutes, or until done. Freezes and reheats well. |
