CHOCOLATE BOTTOM CUPCAKES | |
1 pkg. (8 oz.) cream cheese 1 egg 1 1/3 c. sugar 1/8 tsp. plus 1/2 tsp. salt 1 c. chocolate pieces mint 1 1/2 c. flour 1/4 c. cocoa 1 c. water 1/3 c. oil 1 tbsp. vinegar 1 tsp. vanilla 1 tsp. baking soda TOPPING: 1/2 c. sugar 1/4 c. nuts (mix together) In small bowl combine cream cheese, egg, 1/2 cup of sugar and 1/8 teaspoon salt. ix until creamy. Stir in chocolate pieces. Set aside. In medium bowl combine flour, remaining 1 c. sugar, cocoa, 1/2 teaspoon salt, water, oil, vinegar, vanilla and baking soda. Beat. Insert 18 paper liners. Fill each 1/2 full with flour mixture. Drop 1 heaping teaspoon cream cheese mixture on top. Sprinkle with topping. Bake 350 degrees for 30 minutes. |
