ALBANDIGAS SOUP 
1 lb. ground beef
2 eggs, beaten
1/2 c. chopped pimento
1/3.c chopped cilantro
2 garlic cloves, minced
1/2 tsp. cumin
1/2 tsp. salt
Dash of pepper
2 qt. beef broth
1 med. onion, chopped
2 med. carrots, diced
2 med. zucchini, diced
1/3 head cabbage, sliced
Salt

Mix beef, eggs, pimento, cilantro, garlic, cumin, salt and pepper in a large bowl. Form into 1 inch balls. Heat broth in a large pot until boiling. Add meatballs. Bring to a boil.

Skim foam from surface. Add onion, carrots and zucchini. Bring to a boil. Reduce heat. Simmer 25 minutes uncovered. Add cabbage. Cook 5 minutes longer or until vegetables are tender. Add salt if needed.
