APRICOT CHICKEN 
2 chickens cut in quarters
1/2 c. mayonnaise
1/2 c. ketchup
1/2 c. India relish
1 pkg. onion soup mix (optional)
1 1/3 (12 oz.) jar apricot preserves

Mix a bowl mayonnaise, ketchup and relish; add soup mix and preserves. Mix well. Place chicken in pan; cover with sauce. Cover (with foil or pan cover, but seal well). Bake at 425 degrees for 1 hour. Then uncover and bake at 350 degrees for 45 minutes. Serve with sauce (over rice is nice) ! For smaller quantities of chicken, adjust sauce ingredients accordingly.
