HURRICANE OATMEAL CAKE 
1 c. oatmeal
1 1/4 c. boiling water

Combine and let sit. 1 c. white sugar 1 c. brown sugar 1/2 c. vegetable oil

Beat together. 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon

Mix together and add to egg and sugar mixture. Blend in oatmeal. Turn into 13 x 9 inch pan. Bake at 350 degrees for 30-35 minutes.

TOPPING:

1 c. coconut
1 c. brown sugar
6 tbsp. melted butter
1/2 c. chopped pecans
1/4 c. evaporated milk

Mix together and spread over baked cake. Broil until light brown and crunchy. Serves 20.
