BREADED OKRA 
Okra
Flour
Milk
Pancake mix, dry
Cornmeal

Wash okra. Remove stems without cutting open pods. Blanch 3 minutes in boiling water, submerge 3 minutes in ice water, drain. Cut into desired size pieces. Shake a few at a time in a pan of flour to coat the pieces. Dip flour coated okra in milk. Shake a few at a time in a mixture of equal parts of pancake mix and cornmeal. Arrange on cookie sheets, freeze. Transfer to freezer bags after frozen. Fry without thawing. If thawed before frying, coating will fall off.
