LOBSTER CUTLETS 
2 1/2 tbsp. butter
1/3 c. flour
1/2 tsp. salt
2 c. cut lobster meat
1 tbsp. lemon juice
1 c. milk
1 egg yolk, beaten
1/4 tsp. pepper

Melt butter; add flour, milk and egg yolk. Cook until slightly thickened. Season with salt and pepper and add lobster meat and lemon juice. Cool. Shape into cutlets, roll in bread or cracker crumbs, beaten egg, crumbs again, and fry in deep fat until golden. Serves 6.
