CLAM CHOWDER | |
2 (6 1/2 oz.) cans minced clams 1 c. chopped onion 1 c. diced celery 1 c. shredded carrots 2 c. diced potatoes 3/4 c. butter 3/4 c. flour 1 qt. half & half 1 1/2 tsp. salt 1/2 tsp. sugar Dash of pepper Add clams and vegetable to water in medium saucepan and cook until potatoes are tender, about 25 minutes. Melt butter and add flour. Cook a minute, then add half & half and stir until smooth and thick using a wire whisk to blend. Add vegetable mixture and heat through. Season with salt and pepper and sugar to taste. Serves 8. |
