COCONUT CAKE - SO EASY! 
1 pkg. yellow cake mix
1 1/2 c. milk
1/2 c. sugar
2 c. coconut, total
1 (8 oz.) Cool Whip

Make cake mix as directed on box and bake in a 9 x 13 inch pan. Cool for 15 minutes. Poke holes in cake with a fork. Bring milk, sugar and 1/2 cup coconut to boil. Reduce heat and simmer for 1 minute. Spoon over cake. Cool completely.

Fold 1/2 cup coconut into Cool Whip. Spread on cake. Sprinkle with 1 cup coconut.

Keeps well if covered and put in refrigerator.
