MAGNIFICENT MARINARA 
6 tbsp. olive oil
3 cloves garlic, minced
1 lg. green pepper, chopped
3 scallions, chopped
1 tsp. tarragon
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. cayenne pepper
2 tbsp. wine vinegar
1 lg. can tomato sauce
1/2 c. dry white wine
Salt and pepper (optional but not needed)

Slightly heat skillet or wok; add olive oil and garlic. Stir in all other ingredients. Simmer for at least 1/2 hour, covered. Uncover and simmer 15 more minutes. Serve with your favorite pasta. Serves 4.
