LEMON SUGAR COOKIES | |
1 c. butter, softened 1 c. sugar 1 tsp. vanilla 1/2 tsp. salt 1 whole egg 1 egg, separated 3 tbsp. lemon juice 4 c. flour 1 tbsp. water Colored sugar or chopped nuts Cream butter, sugar, vanilla, and salt until fluffy. Beat in whole egg, egg yolk, and lemon juice. Stir in flour until well blended. Divide dough in fourths and wrap each airtight. Chill overnight. On lightly floured surface, roll out each portion of dough to 1/8 inch thick. With floured small holiday cookie or doughnut cutters, cut in desired shapes. Re-roll scraps. Place 1/2 inch apart on lightly greased cookie sheet. Brush with egg white (beaten slightly and a little water added) and sprinkle top with colored sugar until golden. Bake at 350°F for 8-10 minutes. Makes 96-120 cookies. |
