Dad's Famous Lemon Chicken | |
4 large chicken breasts (skin and bone on), OR One whole chicken, cut up into pieces (for example, breasts split, wings, thighs, legs) Sauce: 1 cup regular olive oil 1 1/2 cup fresh lemon juice 1 tbsp. red wine vinegar 6 cloves of garlic, minced 1/4 cup white wine 1 tsp. dried or fresh oregano 1 tsp. salt Freshly ground pepper 1. Make sauce by combining all sauce ingredients and set aside. 2. Broil chicken pieces SKIN SIDE DOWN (in a baking dish or other pan with sides that will hold the added sauce) about 6 inches below heat element for 10 minutes. 3. Turn chicken skin side UP and broil for another 10 minutes. Skin should get a bit charred. 4. Cut broiled chicken into serving size pieces (cut breasts into 2 or 3 pieces, depending upon how big they are). 5. Return chicken pieces to pan SKIN SIDE DOWN. Pour the sauce all over them. 6. Return pan to oven and broil for 3 minutes. 7. Turn pieces skin side UP and broil for one more minute. 8. Serve and enjoy. |
