VEGETABLE CASSEROLE 
1/2 stick butter
2 c. sliced zucchini, peeled or unpeeled
1/2 c. onion, coarsely chopped
1/2 c. sliced or chopped green pepper
2 c. sliced potatoes, peeled or unpeeled
1/3 c. Parmesan cheese, grated
1/2 c. Mozzarella cheese, shredded
1/4 c. olive oil

CRUMB MIXTURE:

1 c. bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder

In an 8x8 inch baking dish, melt butter. Layer vegetables in this order: zucchini, onion, green pepper, potatoes, zucchini. Sprinkle top with crumb mixture. Sprinkle Parmesan cheese over crumb mixture. Sprinkle olive oil over top. Bake at 375 degrees for 20 minutes. Remove, spread Mozzarella cheese over top. Return to oven and bake 10 more minutes. Serves 8.
