MAMMY'S GINGER CAKES 
1 lg. c. molasses

1 lg. c sugar

1 lg. c. buttermilk

2 lg. tbsp. lard

1 scant tsp. baking soda

1 tbsp. ground ginger

Make almost as stiff with flour as biscuit dough, roll tolerably thin, cut out, and bake quickly. "Breathes there a man with a soul so dead/who does not love hot gingerbread?"

MARSHMALLOW FILLING:

Mix 3 cups of granulated sugar with one cup of water, let boil until it will fall from a spoon like a hair, then heat into it, 1/4 pound of marshmallow candy until it is dissolved. Then pour the mixture into the whites of three well beaten eggs, stirring it all the time until cold. Then put between layers, on top and on sides of cake.
