PASSOVER BANANA NUT CAKE 
8 eggs, separated
1 1/4 c. sugar
1 1/4 c. ripe mashed bananas
3/4 c. finely chopped nuts
3/4 c. sifted cake meal
1/3 c. potato starch
1 1/2 tsp. cinnamon
Juice, rind of 1/2 lemon

Beat egg yolks with 1 cup sugar until light. Add bananas, juice and lemon rind. Beat hard for 3 minutes. Fold in dry ingredients and nuts. Beat whites with 1/4 cup sugar until stiff. Fold into yellow mixture by hand. Use tube pan. Bake in 350 degree oven for 65 to 70 minutes. Invert and cool for 1 hour.
