CAJUN SWISS STEAK | |
1/4 tsp. pepper 1 tbsp. flour 2 lb. cube steak 2 tbsp. oil 1 onion, sliced 1 green pepper, sliced 1/3 c. chopped celery 1/3 c. chopped carrot 1 garlic clove 3/4 c. beef broth 3/4 c. tomato juice 1 tsp. Worcestershire sauce Combine pepper and flour. Sprinkle on both sides in large skillet. Heat oil over medium heat. Add steaks in batches and brown 3 minutes on each side, return all steaks to the skillet. Add on top onion, green pepper, celery, carrots and garlic. Cook until vegetables begin to soften. Then add beef broth, tomato juice and Worcestershire sauce. Cover and simmer for 1 hour (mix last 3 ingredients in bowl together, add). |
